Introduction
The Mushroom has a long history. Recently, as the pure fungi cultivation technology has been developed, artificial cultivation has increased. Demand for mushrooms drastically increased as its nutrition and medical efficacy became widely known.
History
Ancient Greek and Romans enjoyed mushrooms and praised them as 'God's Food'. Chinese also considered it as a miraculous medicine to give eternal youth. According to History of Three Kingdom published in Koryeo dynasty, tree mushrooms and field mushrooms were traced in King Seongdeok, Shinla dynasty. According to True Record of King Seojong, pine mushroom, oak mushroom, Jini mushroom, Jojok mushroom were counted as edible ones while Bokryong mushroom and Bokshin mushroom were considered for medical usage in King Seojong's reign. Recently, western pine mushroom, oak mushroom, shimeji mushroom, ear mushroom and Volvariella volvacea mushroom have been artificially cultivated thanks to the production of pure culture fungi of mushrooms. As the nutrition and medical efficacy of mushrooms are known, its demand increases.
Function in ecosystem
Mushroom consists in hypha cells, which adjust the equilibrium of the natural world as a reducing agent in the ecosystem. - Parasitic fungi Mushrooma are mainly parasitic, living off various trees, dead grasses etc. It decomposes organic substances such as dead grasses and trees and returns them into the ecosystem. - Mutable fungi Mushroom decomposes organic substances, and lets them rot in order to return them into the natural world. - Symbiosis Some mushroom creates plants and mushroom root in order to give and take water and nutrition mutually.
Efficacy
Mushroom prevents geriatric diseases including obesity, hypertension, diabetes and arterial sclerosis, and prevents cancer cells from multiplying. It is low-caloric healthy food including vitamin, mineral, dietary fibre, promoting cholesterol metabolism and discharging out of body.
Mushroom cook
Depending on species, there are mushrooms to enjoy "fragrance", "taste" and "appearance". Most mushrooms are cooked in bean-paste pot stew, mushroom rice, stew with taro and vegetables and other food served in the pot. Diverse dishes can be supplied such as mushroom roast, pine mushroom dish, mayonnaised agaric mushroom roast, hazel mushroom spaghetti, bean-curd mushroom casserole, cold enoki mushroom dish etc. |
