Lamb Stir Fry

Ingredients:
1 pound lamb stir fry strips or boneless lamb cut into thin strips
1 carrot cut into strips
1 capsicum cut into strips
1/4 cup beans cut
few baby corn cut into strips
1 bunch of scallops (spring onion) chopped
1 tbsp garlic
1/4 tbsp ginger
3 tbsp soy sauce
1 tsp corn flour
salt to taste
1 tbsp oil
1 tsp chili powder or chili paste
Method:
Heat the oil in a wok till it is very hot and add the scallops and ginger garlic paste and chili paste fry on high for 3 minutes and add the lamb, salt and 2 tbsp of water and cook on medium covering the wok with a lid till the lamb is tender and cooked, add more water if the lamb is still tough but do not add too much water at a time. Now add the vegetables , soy sauce and , cook on medium heat till the vegetables are partially soft and a little crisp. Add the corn flour and mix well and take off heat. Serve it with fried rice or noodles. |
